The evolution of processed meat beyond traditional taste and preservation
[APAC] Processed Meat Innovation for Better Nutrition and Taste
- 1Processed meat nutrition: High‑protein, reduced‑sodium solutions
- 2Processed meat solutions with clean‑label natural preservation
- 3Processed meat cost‑efficiency: Optimising yield effectively
Increased consumer awareness of ultra-processed food is driving consumers toward more natural, less processed foods. Globally, 60% of consumers say clean labels significantly affect their buying decisions (1). Claims such as no additives or preservatives, and without artificial ingredients are significant clean-label demands for more recognisable and naturally derived preservation systems.
In processed meat products, preservation plays multiple roles beyond controlling microbial growth. Preservatives also act as antioxidants, helping to slow lipid oxidation and prevent rancidity while protecting sensory attributes such as flavour and colour during storage. As consumer preferences shift towards more natural ingredients, manufacturers are exploring alternatives to synthetic preservatives.
However, the use of natural preservatives comes with its own challenges. Natural preservatives often require higher concentration than chemical preservatives to achieve the same effect due to their milder antimicrobial potency (2). As such, this increased preservative dosage may introduce off-flavours and impact the taste profile of the product.
Extended shelf-life meatballs
Our extended shelf-life meatball is formulated to address the growing need for clean-label preservation without compromising on product quality. Natural preservative is used to support microbial control and preserve freshness throughout shelf-life, while yeast extract is added to enhance the savoury notes and meaty profile. This demonstrates how shelf-life stability and sensory performance can be achieved simultaneously to offer extended freshness without compromising on taste.
Concept highlight
- Rich and natural chicken flavour from yeast extract
- Naturally preserved to effectively extend the shelf-life
At IMCD, we offer a wide range of solutions that allows manufacturers to combine preservation system, flavour support and texture optimisation in their products to help extend shelf-life while maintaining clean-label confidence.
